Broccoli Raisin Salad with Homemade Dressing

Broccoli is my favorite ingredient when it comes to Salad. I like it raw version and stir fry tastes great as well.(Stir- fry curry) Whether it’s salad or Chinese  food, I like to use them the most. For Dinner, I usually like to prepare Broccoli Apple Salad , my family loves that; because yogurt dressing enhances the flavor, and crunchiness of apple pieces gives the extra flavor to the salad. And recently, I have tried Broccoli Raisin Salad and made dressing from scratch. It came out so well, so thought of sharing it with you guys.

Ingredients:

10-15 Broccoli Florets

2 cups shredded Lettuce

1/2 Cup cubed Cucumber

1/2 small thinly sliced onion (Optional)

1 thinly sliced carrot

Few dried Raisins

Few Dried Cranberry (Optional)

Croutons or Fried Onions for toppings

Dressing:

5-6 Tbs Olive Oil

1-2 Tsp Honey or Brown Sugar

2-3 Chopped Basil or Mint

Salt to Taste

Pinch of Black pepper

Pinch of Dried Parsley

Pinch Of minced Garlic

1-2 Tsp Vinegar or Lemon Juice

  • Add all of the dressing ingredients to a small bowl and briskly whisk until all of the ingredients come together. Taste and adjust seasoning.
  • Mix all the ingredients in a large bowl except toppings( Croutons or Fried onions)
  • Add dressing and toppings to salad, toss, and serve.IMG_6064
