Green Garlic/Mint-Coriander Chutney (Spread)

When I hear the name Green chutney first thing comes in my mind is Chaat and Samosa. Green chutney is the main and most important ingredient for any kind of chaat or Indian appetizer such as Papdi Chaat, Bhel-puri, Dahi-puri, Ragda-Pattis, Panner-Tikka or even the best spread for Indian style sandwich. I usually make this spread in way advance and it can be stored very well in the freezer for a long time. Whenever I go for grocery shopping I like to buy 3-4 bunch of coriander leaves. And I use them in making Green chutneys: Mint Chutney, Green Garlic Chutney and Coriander Chutney. All  I need to do is wash them thoroughly, add them in blender with other ingredients and spread would be ready in minutes. It is like pesto spread, but the taste of this spread is spicy, sweet and little tangy which is exceptional and I am sure no other spread can replace this.We like to have spicy food so, we like to add Thai green chilies to it, but Jalapeno peppers work just fine. In winter season, green garlic is readily available in market so, it can be added as a secondary ingredient or instead of garlic Mint can be added too. I usually freeze this spread in ice cube trays, then these cubes can be stored  in Ziploc bags in freezer. So, in this way I do not have to worry about the thawing and refreezing again. Just take out the required qty of cubes and thaw them in room temperature and ready to use. If sometimes I am in hurry and forget to take out the cubes in advance or few minutes before the serving, I microwave them in microwave safe bowl for a 15-20 seconds, and it’s ready to use.

Here,  I am sharing one common recipe for three chutneys i.e.Coriander, Mint and Green Garlic Chutney. Coriander leaves is the primary ingredient for all three kinds.Mint or Garlic  can be skipped to make this green chutney if you do not wish to add.

Ingredients:

1 Cup Chopped Coriander Leaves

5 Tbs Green Garlic/ Mint(Optional)

2 Tbs Groundnuts

3 Green Chilies (As per the taste)

2-3 tsp Ground Cumin Powder

2-3 Tsp Sugar

2/3 Tsp Salt to taste

2-3 Tbs Lemon Juice

Water to adjust consistency

Make it:

  • In a blender add Green Chilies, Groundnuts, Ground Cumin, sugar and salt.
  • Grind them coarsely.
  • Now, add chopper coriander leaves, mint/garlic and lemon juice. Add 1-2 tsp of water.
  • Grind them until its smooth in consistency. Add more water if required to adjust the smooth consistency .
  • Serve this chutney with Hot Pakora, samosa or any of your favorite Indian appetizer or as a condiment for chaat.
